Korean BBQ 한우 grade decoder
Korean beef (한우, hanwoo) is graded by marbling, meat color, fat color, and texture into four official levels: 1++ (최고 등급), 1+, 1, and 2. Higher grade = more intramuscular fat = more buttery flavor. Imported beef is labeled 수입 (imported, usually Australia/US) and is usually 40–60% cheaper per 100g. The catch: many tourist-zone restaurants inflate the grade label on the menu, and an actual 1++ is rare at any "한우 1++" restaurant in Myeongdong or Hongdae for under ₩35,000 per 100g.
Grade & fraud likelihood
What this solves
Most foreign visitors don't know how to read the marbling or how to push back on inflated claims. The honest question is: at the price you're being quoted, what grade are you realistically getting? This tool gives you a percentage likelihood of fraud, plus what to ask the server.
The four grades
1++ (No. 1 plus plus): the top 5% of carcasses. Heavy marbling (BMS 8+), snowflake pattern. 1+ (BMS 6–7): noticeable marbling, still excellent. 1 (BMS 4–5): leaner, still good flavor. 2 (BMS 1–3): minimal marbling, often used in soups. Imported beef doesn't get the 1++ system.
Price vs grade
Realistic 2026 prices per 100g: 1++ ₩35,000–₩55,000, 1+ ₩22,000–₩32,000, 1 ₩15,000–₩22,000, 2 ₩10,000–₩14,000, imported ₩5,000–₩10,000. Below ₩20,000 for "1++" is a red flag — likely 1+ or imported.
Tourist-zone inflation
Anecdotal evidence: in Myeongdong's tourist 고깃집, an "1++" set under ₩30,000/100g is statistically likely 1+ or imported mis-labeled. The Korea Consumer Agency has issued repeated advisories. Verify by asking the origin 농장 (farm) — real 1++ usually comes from 횡성, 안동, 평창, or other 명품 한우 regions.
Cuts & grades
The grade-grading is on the whole animal, not the cut. But: 꽃등심 (ribeye cap) pairs best with 1++; 등심 (striploin) with 1+; 안심 (tenderloin) is grade-independent but high-price; 갈비 (short rib) with 1+ or 1. Tourist menus often sell 1+ at 1++ prices for 꽃등심.
How to read the result
- Likelihood of grade match = rough estimate, not a guarantee.
- Realistic grade = what you're likely getting.
- Cut/grade suggestion = how to order at this price.
Limitations
- Marbling is hard to see for first-timers; ask the server to bring raw cuts before cooking.
- Some honest shops correctly label 1+ as "premium" without claiming 1++.
- Imported beef is not lower quality — it's different; some prefer it.
- The farm-name rule is a useful but not 100% reliable fraud detector.
- Restaurant chains (e.g., 명가, 한우마을) tend to be more honest than independent tourist-area spots.
FAQ
How do I ask for the farm origin?
"어디 농장이에요?" (Where is the farm from?) or "한우 산지가 어디예요?" Honest shops will name a region. Deflection = bad signal.
Is 1+ vs 1++ really that different?
Yes — about 1.5× to 2× the marbling. The eating experience is noticeably different: 1++ almost melts, 1+ has more bite and beefiness.
What's a fair price for two to share?
For 2 people, a 200g set at ₩15,000/100g + drinks ~ ₩50,000–₩70,000 total. Premium 1++ experience: ₩120,000–₩180,000.
Can I return the meat if it's not what was promised?
Theoretically yes under the Korean Consumer Protection Law; practically, very rare. The cleaner move: choose a different restaurant.
